This is my favorite birthday cake recipe that my mother did for me every year. Mother has always made me feel special on our birthdays. We have our favorite dish and dessert that would have done anything we wanted. 'Has almost always been the one I requested. I bought it for me once I was on my own and finally realized how much effort I made mom go through each year. But the payoff was so worth it. I love this cake, because, unlike traditional recipes. Thetaste and texture is so unique. I hope you enjoy it.
Poppy seed cake
3 / 4 cup butter
3 / 4 cup milk
2 teaspoons baking powder
1 / 2 cup poppy seeds
1 1 / 2 cups white sugar
2 cups flour
4 egg whites
1 / 2 to 1 / 4 cup milk
Soak poppy seeds in 3 / 4 cup of milk at night or at least 2 hours. Beat the egg whites in a bowl. Reserve the yolks for the caramel topping below. Combine all other ingredients and then add the egg whites. Pour into a 9 x13 inch pan greased. Bake at 350 degrees for 40 to 45 minutes.
The next two recipes are the frosting on the cake of this.
Caramel Topping
4 egg yolks
1 / 2 cup chopped pecans
1 / 2 cup heavy cream
1 cup white sugar
Combine above ingredients and cook until thick. Spread over top of cooled cake.
7 Minute Boiled Frosting
1 egg
3 / 4 cup white sugar
1 tablespoon white syrup
2 1 / 2 tablespoons water
1 teaspoon vanilla
SetThe first four ingredients in a double boiler and heat over medium heat. With an electric mixer, beat the mixture until it is in the mountains. It should look white and creamy. Add the vanilla and spread frosting over caramel topping on the cake.
