¾ cup granulated sugar

Remove from heat, pour into a bowl and let mixture cool to room temperature. Oncecooled, add ½ cup butter (cut into pieces), and beat at medium speed of electric mixer until smooth. Add the remaining butter, again beating until smooth. Stir in almond extract and chill for about 20 minutes before use. Makes about 2 cups.
